Crunchy. Creamy. Naturally Sweet.

INGREDIENTS

  • 2–3 large apples (any variety)
  • 1/2 cup peanut butter (or almond, sunflower, or other nut/seed butter)
  • 1/4 cup granola (use gluten-free if needed)
  • 2 tablespoons dried cranberries (or raisins)
  • 2 tablespoons mini chocolate chips (optional)
  • 2 tablespoons shredded coconut (optional)
  • 1 tablespoon honey (optional)
  • 1/2 teaspoon cinnamon (optional)
  • Optional toppings: chopped nuts, chia seeds, or a sprinkle of cinnamon

DIRECTIONS

  1. Wash the apples. Rinse apples under cool water and dry well.
  2. Slice the apples. Using a sharp knife (with adult help), slice apples into 1/4-inch thick rounds. Cut out the core if desired (using a cookie cutter or small round cutter).
  3. Spread the filling. Spread a layer of peanut butter (or your favorite nut/seed butter) on one apple slice.
  4. Add the toppings. Sprinkle with granola, dried cranberries, chocolate chips, or any of your favorite extras.
  5. Make the sandwich. Top with another apple slice and press gently.
  6. Enjoy! Serve right away, or make a few and keep them in the fridge for later.
