Small Cups. Big Flavor. Happy Kids!

INGREDIENTS

  • 1 package (10–12) small flour tortillas (street taco size or cut regular tortillas into circles)
  • 1 lb. ground beef, turkey, or chicken
  • 1 packet taco seasoning (or homemade, see note)
  • 1/4 cup water
  • 1 cup shredded cheese (cheddar, Mexican blend, or your favorite)
  • Lettuce, shredded
  • Diced tomatoes
  • Sour cream
  • Salsa
  • Chopped green onions (optional)
  • Sliced olives (optional)
  • Avocado or guacamole (optional)

DIRECTIONS

  1. Preheat. Heat oven to 375°F (190°C).
  2. Make the cups. Lightly spray a muffin tin with cooking spray. Press a tortilla circle into each cup, gently folding the edges to create a little “cup.”
  3. Bake cups. Bake for 8–10 minutes, or until the edges are golden and crisp. Remove and set aside.
  4. Cook the meat. In a skillet, brown ground beef, turkey, or chicken. Drain any excess grease. Stir in taco seasoning and water. Simmer for 3–5 minutes until thickened.
  5. Fill the cups. Spoon the seasoned meat into each tortilla cup.
  6. Add toppings. Sprinkle with cheese and any of your favorite toppings.
  7. Serve. Enjoy warm!
