Tart, sweet, and absolutely refreshing, this Raspberry Lemonade is summer in a glass. Made with fresh raspberries, real lemon juice, and a touch of honey, it’s a vibrant, thirst-quenching drink that’s as beautiful as it is delicious. Simple, fresh, and perfect for porch sitting, family gatherings, or any day that could use a little more sunshine.
INGREDIENTS
- 2 cups fresh raspberries (plus extra for garnish)
- 1 cup fresh lemon juice (about 4-6 lemons)
- 1/2-3/4 cup honey (or to taste)
- 4 cups cold water (still or sparkling)
- Fresh mint leaves (for garnish, optional)
- Ice
DIRECTIONS
- In a medium saucepan, combine raspberries and 1/2 cup of the water. Bring to a gentle simmer over medium heat, cooking for 5-7 minutes until the raspberries are soft and juicy.
- Remove from heat and mash the raspberries with a spoon. Let the mixture cool for a few minutes, then strain through a fine mesh sieve to remove the seeds. Press gently to get all the flavorful juice. Discard the solids.
- In a large pitcher, combine the raspberry liquid, fresh lemon juice, honey, and remaining 3 1/2 cups of cold water. Stir well until the honey is fully dissolved.
- Chill for at least 30 minutes to allow the flavors to meld.
- Serve over ice and garnish with fresh raspberries, lemon slices, and mint leaves.
